BLACKBERRY MOJITO
The sun is finally shining and what better way to celebrate than with a fruity, refreshing cocktail. Blackberry season is just the corner, but if you're not able to get your hands on fresh berries, frozen fruit is a great replacement!
Makes 1 cocktail
Ingredients:
fresh blackberries (about 4–5 berries per drink)
1 ounce fresh lime juice
1 ounce simple syrup (equal parts sugar and water)
mint leaves (about 5 leaves per drink)
2 ounces white rum
1 cup crushed ice
club soda
Preparation:
Combine blackberries, lime juice, simple syrup, and mint leaves in a cocktail shaker. Muddle until blackberries are broken up and release their juice and mint leaves are fragrant.
Add rum and ice to the cocktail shaker, and shake well to combine.
Pour cocktail (strain, if desired) into highball glasses.
Top with club soda.
Garnish with a mint sprig and a skewered blackberry.
